
Directions:
- Preheat oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper.
- In a mixing bowl, cream together butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until smooth.
- In a separate bowl, whisk together flour, baking powder, and salt. Gradually mix the dry ingredients into the wet mixture until combined.
- Spread half of the dough evenly into the prepared pan.
- Drop spoonfuls of marshmallow fluff over the dough and gently spread it into an even layer. Sprinkle mini chocolate chips over the fluff, if using.
- Crumble the remaining dough over the top, pressing gently to cover the marshmallow layer.
- Bake for 25-30 minutes, or until the top is golden brown. Allow to cool completely before slicing into bars.
