Ingredients (Makes ~12 fritters)
- 2 cups mixed vegetables, grated or finely chopped (carrots, zucchini, bell pepper, etc.)
- 1 cup (100 g) shredded cheese (cheddar, mozzarella, or your choice)
- 2 large eggs
- ½ cup (60 g) all-purpose flour
- 1 tsp garlic powder
- Salt and pepper to taste
- 2–3 tbsp vegetable oil for frying
- Optional: chopped herbs (parsley, chives)
Instructions
- Prepare vegetables:
Grate or finely chop vegetables. Squeeze out excess moisture using a clean towel or paper towel.
- Mix batter:
In a bowl, combine vegetables, cheese, eggs, flour, garlic powder, salt, pepper, and optional herbs. Mix until well combined.
- Heat oil:
In a large skillet, heat 2–3 tbsp vegetable oil over medium heat.
- Form fritters:
Scoop 2–3 tbsp of the mixture for each fritter, flatten slightly, and place in the skillet.
- Cook:
Fry 3–4 minutes per side until golden brown and cooked through.
- Drain & serve:
Place fritters on a paper towel to remove excess oil. Serve warm with sour cream, yogurt, or your favorite dipping sauce.
