1. Prepare the Meat
- In a skillet, cook ground beef with onion and garlic until browned.
- Drain excess fat, stir in taco seasoning, and ½ cup salsa.
- Remove from heat and stir in beans.
2. Assemble the Layers
- Preheat oven to 350°F (175°C).
- In a greased 9×13-inch baking dish, place 2–3 tortillas to cover the bottom.
- Layer ½ of the meat and bean mixture over the tortillas.
- Spread ½ of the cheese over the meat, and dollop with ¼ cup sour cream if using.
- Repeat with another layer of tortillas, meat, cheese, and sour cream.
- Top with remaining tortillas and remaining cheese.
3. Bake
- Cover with foil and bake 20 minutes.
- Remove foil and bake another 10 minutes until cheese is melted and bubbly.
4. Serve
- Let rest 5 minutes before cutting.
- Garnish with optional toppings like cilantro, jalapeños, or diced tomatoes.
- Serve with guacamole, sour cream, or extra salsa on the side.
