Cheesy Baked Tortilla Casserole

Ingredients (serves 6–8)

  • 8–10 flour or corn tortillas
  • 1 lb (450 g) ground beef or chicken
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or homemade: 1 tsp chili powder, ½ tsp cumin, ½ tsp paprika, ¼ tsp cayenne, salt & pepper)
  • 1 can (15 oz) black beans or pinto beans, drained and rinsed
  • 1 cup salsa or enchilada sauce
  • 2 cups shredded cheddar or Mexican blend cheese
  • ½ cup sour cream (optional, for layering)
  • Optional toppings: chopped cilantro, sliced jalapeños, diced tomatoes, green onions
