
Instructions
- Preheat oven: Preheat to 375°F (190°C). Line a baking sheet with parchment paper.
- Cook the beef:
- In a skillet over medium heat, cook ground beef, onion, and garlic until beef is browned and onion is soft.
- Drain excess fat. Add chili powder, cumin, salt, and pepper. Stir to combine.
- Assemble the pockets:
- Lay out a tortilla. Spoon some beef mixture onto the center, sprinkle with cheddar and mozzarella cheese, and add optional toppings if desired.
- Fold the sides over and roll tightly to form a pocket. Place seam-side down on the baking sheet.
- Brush and bake:
- Brush the tops with beaten egg for a golden finish.
- Bake for 15–20 minutes until golden brown and cheese is melted.
- Serve:
- Serve warm with salsa, sour cream, or guacamole on the side.
