Ingredients

  • 2 cups all-purpose flour
  • ¾ cup sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter, melted
  • 2 eggs
  • ¾ cup milk
  • 2 tbsp dark rum (or rum extract)
  • 1 tsp vanilla extract

Optional Topping

  • Powdered sugar or rum glaze

Instructions

  1. Preheat Oven
    Preheat to 375°F (190°C). Line a muffin tin.
  2. Mix Dry Ingredients
    In a bowl, whisk flour, sugar, baking powder, and salt.
  3. Mix Wet Ingredients
    In another bowl, whisk butter, eggs, milk, rum, and vanilla.
  4. Combine
    Add wet ingredients to dry and mix just until combined.
  5. Bake
    Fill muffin cups ¾ full. Bake 18–22 minutes until golden and a toothpick comes out clean.
  6. Serve
    Cool slightly and dust with powdered sugar or drizzle with glaze.
