1. Prep the potatoes
- Cut potatoes into fries (no need to peel).
- Soak in cold water 20 minutes (optional, makes them crispier).
- Drain and pat dry well.
2. Season
In a bowl mix:

- Paprika
- Italian seasoning
- Salt & pepper
Add fries and coat well.

3. Bake
- Spread fries on a baking sheet (no crowding).
- Bake at 220°C / 425°F for 25–30 minutes,
flipping halfway.
4. Finish
- Toss with remaining Parmesan while hot.
- Garnish with fresh parsley (optional).
