Apple Crisp Cheesecake

🔥 Instructions

1. Preheat Oven

Set oven to 325°F (160°C).

2. Make the Crust

Mix graham crumbs + melted butter + sugar + cinnamon.
Press firmly into bottom of a 9-inch springform pan.
Bake 8 minutes. Set aside.

3. Prepare the Apple Layer

In a skillet, cook:

  • Butter
  • Apples
  • Brown sugar
  • Cinnamon
  • Nutmeg
  • Lemon juice

Cook 5–7 minutes until softened.
Let cool slightly.

4. Make the Cheesecake Filling

Beat cream cheese until smooth.
Add sugar, then eggs (one at a time), vanilla, and sour cream.
Mix until creamy — don’t overbeat.

Pour filling over crust.

5. Add the Apple Layer

Spoon the cooked apples evenly over the cheesecake filling.

6. Add the Crisp Topping

In a bowl combine:

  • Oats
  • Brown sugar
  • Flour
  • Cold butter cubes
  • Cinnamon
  • Salt

Use fingers to crumble into a coarse, sandy mixture.
Sprinkle over the apples.

7. Bake

Bake 55–70 minutes, until edges are set and the center is slightly jiggly.

Turn off the oven, crack the door open, and let cheesecake cool inside for 1 hour (prevents cracking).

Then refrigerate at least 4 hours, or overnight for best texture.

Serve With

  • Caramel sauce drizzle
  • Whipped cream
  • Vanilla ice cream
  • Extra warm sautéed apples

🍎 Tip for Perfection

The crisp topping stays crisp even after chilling — but you can broil it for 1–2 minutes before cooling for extra crunch!
