🇭🇺 Hungarian Walnut and Poppy Seed Rolls (Diós és Mákos Kalács)
Ingredients:
For the dough:
- 4 cups (500 g) all-purpose flour
- ⅔ cup (130 g) sugar
- 1 packet (7 g) dry yeast or 25 g fresh yeast
- 1 cup (250 ml) lukewarm milk
- 2 egg yolks
- 7 tbsp (100 g) unsalted butter, melted
- Pinch of salt
- Zest of 1 lemon
For the walnut filling (Diós):
- 2 cups (200 g) ground walnuts
- ¾ cup (150 g) sugar
- ½ cup (120 ml) milk
- 1 tsp vanilla extract
- Zest of 1 lemon
For the poppy seed filling (Mákos):
- 2 cups (200 g) ground poppy seeds
- ¾ cup (150 g) sugar
- ½ cup (120 ml) milk
- 1 tsp vanilla extract
- Zest of 1 orange
For brushing:
- 1 egg yolk + 1 egg white (separately)
