- 2 lbs (900 g) potatoes, peeled & cut into chunks
- 1 bell pepper, chopped (optional but adds flavor)
- 1 medium tomato, chopped (or 1 tbsp tomato paste)
- 4 cups chicken or vegetable broth (or water with a bouillon cube)
- 1 bay leaf
- ½ tsp caraway seeds (optional)
