Bóllérmaj 🇭🇺, also known as “butcher’s liver” or “slaugherman’s liver”, is a rich and rustic Hungarian dish traditionally prepared during winter pig slaughters (disznóvágás). It’s a hearty liver dish spiced with onions, paprika, and often enriched with lard or bacon—full of bold flavors and deeply rooted in countryside tradition.

  • 500g (1.1 lb) fresh pork liver (cleaned and sliced)
