Ingredients:
- 1 kg calamari (squid), cleaned and washed
- 1/2 cup rice (Egyptian or Basmati)
- 1/4 cup finely chopped parsley
- 2 tbsp olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup chopped tomatoes
- 1/4 cup chopped bell pepper (optional)
- 1/4 cup mozzarella cheese (optional)
- Salt and pepper to taste
- 1/2 tsp cumin
- 1/2 tsp paprika
- Juice of 1 lemon
- 1/2 cup chicken broth or water
