Hungarian Chicken Paprikash (Paprikás Csirke) Recipe

Ingredients:

  • 1 kg chicken thighs or drumsticks
  • 2 large onions, finely chopped
  • 2 tbsp lard or oil
  • 2–3 tbsp Hungarian sweet paprika
  • 2 cloves garlic, minced
  • 1 tomato, chopped (or 2 tbsp tomato paste)
  • 1 green pepper, chopped (optional)
  • 250 ml chicken broth or water
  • 200 ml sour cream
  • 1 tbsp flour (optional, for thickening)
  • Salt and black pepper to taste

Instructions:

  1. Heat lard or oil in a large pot over medium heat.
  2. Add onions and cook slowly until soft and golden.
  3. Remove from heat and stir in paprika quickly (to avoid burning it).
  4. Add chicken pieces and coat them in the onion-paprika base.
  5. Return to heat and lightly brown the chicken.
  6. Add garlic, tomato, and green pepper.
  7. Pour in broth, cover, and simmer for 40–50 minutes until chicken is tender.
  8. In a bowl, mix sour cream with flour (if using).
  9. Stir sour cream mixture into the pot and cook for another 5–10 minutes until creamy.
  10. Season with salt and black pepper.
