Hungarian Chicken Paprikash (Paprikás Csirke)

Ingredients:

  • 1 kg chicken thighs or drumsticks
  • 2 large onions, finely chopped
  • 2 tbsp lard or oil
  • 2–3 tbsp Hungarian sweet paprika
  • 2 cloves garlic, minced
  • 1 tomato, chopped (or 2 tbsp tomato paste)
  • 1 green bell pepper, chopped (optional)
  • 200 ml sour cream
  • 1 tbsp flour (optional, for thickening)
  • 250 ml chicken broth or water
  • Salt and black pepper to taste

Instructions:

  1. Heat lard or oil in a large pot over medium heat.
  2. Add onions and cook until soft and golden.
  3. Remove from heat and stir in paprika quickly (do not burn it).
  4. Add chicken pieces and coat well in the onion-paprika base.
  5. Return to heat and lightly sear the chicken.
  6. Add garlic, tomato, and bell pepper.
  7. Pour in broth or water, cover, and simmer for 40–50 minutes until chicken is tender.
  8. Mix sour cream with flour (if using), then stir into the pot.
  9. Cook for another 5–10 minutes until the sauce is creamy.
  10. Season with salt and black pepper to taste.
