Hungarian Paprikás Potatoes (Paprikás Krumpli)

Ingredients:

  • 1 kg potatoes, peeled and cut into chunks
  • 2 onions, chopped
  • 2 tbsp oil or lard
  • 2 tbsp Hungarian sweet paprika
  • 2 cloves garlic, minced
  • 1 tomato, chopped (or 2 tbsp tomato paste)
  • 1 green bell pepper, chopped (optional)
  • 250 g smoked sausage, sliced (optional)
  • 700–900 ml water or broth
  • Salt and black pepper to taste
  • 1 tsp caraway seeds (optional)

Instructions:

  1. Heat oil or lard in a large pot and sauté onions until soft and golden.
  2. Remove from heat and stir in paprika quickly.
  3. Add garlic, tomato, and bell pepper, mixing well.
  4. Add sliced sausage if using, and cook for 2–3 minutes.
  5. Add potatoes and stir to coat in the paprika mixture.
  6. Pour in water or broth until the potatoes are mostly covered.
  7. Season with salt, pepper, and caraway seeds.
  8. Cover and simmer for 25–35 minutes until potatoes are tender and the sauce thickens.
  9. Stir occasionally and adjust seasoning if needed.
