Hungarian Goulash Soup (Gulyásleves) – Don’t Lose This Recipe!

Ingredients:

  • 500–700 g beef (stew meat), cubed
  • 2 large onions, chopped
  • 2–3 tbsp oil or lard
  • 2 tbsp sweet paprika
  • 1 tsp hot paprika (optional)
  • 2–3 cloves garlic
  • 2 carrots, sliced
  • 1 parsley root (optional)
  • 2 potatoes, diced
  • 1 green pepper
  • 1 tomato
  • 1 tsp caraway seeds
  • Salt and black pepper
  • 1.5–2 liters water or broth

Instructions:

  1. Cook onion in oil until soft and golden.
  2. Remove from heat, add paprika, stir quickly.
  3. Add beef and brown it well.
  4. Add garlic, caraway seeds, pepper, tomato, salt, and black pepper.
  5. Pour in water or broth and simmer until meat is tender.
  6. Add carrots, parsley root, and potatoes.
  7. Cook until vegetables are soft.
  8. Adjust seasoning and serve hot, usually with bread.
