Hungarian Madártej (Floating Islands Dessert)

Ingredients:

  • 1 liter milk
  • 5 eggs
  • 120 g sugar
  • 1 tsp vanilla extract or vanilla sugar
  • Pinch of salt
  • Optional: caramel or cinnamon for topping

Instructions:

  1. Heat the milk with vanilla until warm (do not boil).
  2. Separate eggs. Beat egg whites with a pinch of salt until stiff.
  3. Add spoonfuls of whipped egg white into the warm milk and cook for 1–2 minutes, turning once, then remove.
  4. Beat egg yolks with sugar.
  5. Slowly add some hot milk to the yolks while stirring, then pour everything back into the pot.
  6. Heat gently until slightly thickened (do not boil).
  7. Pour into bowls and place the cooked egg white “islands” on top.
  8. Chill and serve cold.
