
🧾 Ingredients:
For the dough:
- 500 g all-purpose flour
- 200 g butter (cold, cubed)
- 50 g powdered sugar
- 1 tsp salt
- 2 egg yolks
- 100 ml milk (lukewarm)
- 7 g dry yeast (or 20 g fresh yeast)
For the walnut filling:
- 300 g ground walnuts
- 150 g sugar
- 100 ml milk
- 1 tsp vanilla extract
- Zest of 1 lemon
- 1 tbsp honey (optional)
For brushing:
- 1 egg (for glaze)

👩🍳 Instructions:
- In a small bowl, mix lukewarm milk with yeast and a pinch of sugar. Let it sit for 5–10 minutes until foamy.
- In a large bowl, combine flour, powdered sugar, and salt. Add butter and rub it into the flour until crumbly.
- Add egg yolks and the yeast mixture, then knead into a smooth dough. Divide into 2 portions, cover, and let rest for 30–40 minutes.
- For the filling, heat milk and sugar until dissolved. Remove from heat, then mix in ground walnuts, vanilla, lemon zest, and honey. Let cool.
- Roll each dough portion into a rectangle. Spread the walnut filling evenly over each.
- Roll up tightly like a log and place seam-side down on a baking tray lined with parchment paper.
- Brush with beaten egg and let rest for 15–20 minutes. For a classic look, brush again before baking.
- Bake in a preheated oven at 180°C (350°F) for 30–35 minutes until golden brown.
- Let cool before slicing.
