🇭🇺 Authentic Hungarian Walnut Rolls (Bejgli)

🧾 Ingredients:

For the dough:

  • 500 g all-purpose flour
  • 200 g butter (cold, cubed)
  • 50 g powdered sugar
  • 1 tsp salt
  • 2 egg yolks
  • 100 ml milk (lukewarm)
  • 7 g dry yeast (or 20 g fresh yeast)

For the walnut filling:

  • 300 g ground walnuts
  • 150 g sugar
  • 100 ml milk
  • 1 tsp vanilla extract
  • Zest of 1 lemon
  • 1 tbsp honey (optional)

For brushing:

  • 1 egg (for glaze)

👩‍🍳 Instructions:

  1. In a small bowl, mix lukewarm milk with yeast and a pinch of sugar. Let it sit for 5–10 minutes until foamy.
  2. In a large bowl, combine flour, powdered sugar, and salt. Add butter and rub it into the flour until crumbly.
  3. Add egg yolks and the yeast mixture, then knead into a smooth dough. Divide into 2 portions, cover, and let rest for 30–40 minutes.
  4. For the filling, heat milk and sugar until dissolved. Remove from heat, then mix in ground walnuts, vanilla, lemon zest, and honey. Let cool.
  5. Roll each dough portion into a rectangle. Spread the walnut filling evenly over each.
  6. Roll up tightly like a log and place seam-side down on a baking tray lined with parchment paper.
  7. Brush with beaten egg and let rest for 15–20 minutes. For a classic look, brush again before baking.
  8. Bake in a preheated oven at 180°C (350°F) for 30–35 minutes until golden brown.
  9. Let cool before slicing.
