Hazelnut and Chocolate Layer Cake (Hungarian Esterházy Torte)

Ingredients (serves 8–10):

For the cake layers:

  • 6 egg whites
  • 200 g (1 cup) sugar
  • 200 g (2 cups) ground hazelnuts (or almonds)
  • 2 tbsp all-purpose flour
  • Pinch of salt

For the buttercream:

  • 6 egg yolks
  • 150 g (¾ cup) sugar
  • 200 ml (¾ cup) milk
  • 200 g (1 cup) unsalted butter, softened
  • 1 tsp vanilla extract

For the topping:

  • 100 g white chocolate
  • 50 g dark chocolate
  • 2–3 tbsp apricot jam
