Hungarian Jókai Bean Soup (Jókai Bableves)

🛒 Ingredients

  • 2 cups dried beans (soaked overnight)
  • 8 oz (200–250g) smoked pork (ham hock or smoked ribs)
  • 6 oz (150g) smoked sausage (kolbász), sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, sliced
  • 1 parsley root (or parsnip), sliced
  • 1 bay leaf
  • 1 tsp paprika
  • 2 tbsp flour
  • 2 tbsp oil or lard
  • ½ cup sour cream
  • 1 tbsp vinegar (optional)
  • Salt and black pepper to taste
  • Fresh parsley (for garnish)
