🇭🇺 Hungarian Grated Jam Tart (Reszelt Sütemény)

🛒 Ingredients:

  • 300 g (2 ½ cups) all-purpose flour
  • 150 g (⅔ cup) sugar
  • 150 g (⅔ cup) butter (cold)
  • 1 egg
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon (optional)
  • 300–400 g (about 1–1½ cups) jam (apricot, raspberry, or your favorite)
  • Pinch of salt

👩‍🍳 Instructions:

  1. Prepare the dough:
    In a bowl, mix flour, sugar, baking powder, and salt. Add cold butter and rub it into the mixture until crumbly.
  2. Add wet ingredients:
    Mix in the egg, vanilla extract, and lemon zest. Knead into a soft dough.
  3. Divide & chill:
    Split the dough into two portions (one slightly larger). Wrap and place in the freezer for about 30–40 minutes.
  4. Preheat oven:
    Heat oven to 180°C (350°F).
  5. Form the base:
    Take the larger piece of dough and grate it evenly into a greased or lined baking pan. Press it lightly to form a base.
  6. Add jam layer:
    Spread the jam evenly over the base.
  7. Top layer:
    Grate the remaining dough over the jam, covering it like crumbs.
  8. Bake:
    Bake for 30–35 minutes until golden brown.
  9. Cool & serve:
    Let it cool completely before cutting into squares.
