Hungarian Cheese Biscuits (Pogácsa)

Ingredients:

  • 500 g (4 cups) all-purpose flour
  • 250 g (1 cup) butter or lard, softened
  • 200 g (3/4–1 cup) sour cream
  • 1 egg + 1 egg yolk (for brushing)
  • 25 g (2 tbsp) fresh yeast (or 7 g active dry yeast)
  • 100 ml (1/2 cup) lukewarm milk
  • 1 tsp sugar
  • 1–1½ tsp salt
  • 150 g (1½ cups) grated cheese (cheddar, edam, or trappista-style)
