Hungarian Goulash (Gulyás)

Ingredients:

  • 2 tbsp oil or lard
  • 2 large onions, finely chopped
  • 500–700g beef (chuck), diced
  • 2 tbsp Hungarian paprika
  • 1 tsp salt (adjust to taste)
  • 1/2 tsp black pepper
  • 1 tsp caraway seeds (optional)
  • 2 cloves garlic, minced
  • 1 tomato, chopped (or 1 tbsp tomato paste)
  • 1 green bell pepper, chopped
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 bay leaf
  • 5–6 cups water or beef broth

Instructions:

  1. Heat oil or lard in a large pot. Add onions and cook slowly until soft and golden.
  2. Add beef and brown on all sides.
  3. Remove pot from heat and stir in paprika (this keeps it from burning).
  4. Add garlic, tomato, and bell pepper. Mix well.
  5. Season with salt, pepper, and caraway seeds.
  6. Pour in a little liquid, stir, then add remaining broth or water and bay leaf.
  7. Cover and simmer for about 1.5 hours until beef begins to soften.
  8. Add carrots and potatoes, then continue cooking for another 25–30 minutes.
  9. Adjust seasoning and serve hot.
