Hungarian Jam Crumble Cake (Lekváros Pite)

Ingredients

For the dough:

  • 400 g (3 cups) all-purpose flour
  • 200 g (1 cup) butter (cold, cubed)
  • 120 g (½ cup) sugar
  • 2 eggs
  • 1 teaspoon baking powder
  • Pinch of salt
  • 1 teaspoon vanilla

For the filling:

  • 250–300 g (1 cup) thick jam
    (plum jam is traditional – szilvalekvár)

For topping:

  • 1 teaspoon cinnamon
  • 2 tablespoons sugar

Instructions

1️⃣ Mix flour, baking powder, sugar, salt, and butter until crumbly.

2️⃣ Add eggs and vanilla, knead into smooth dough.

3️⃣ Divide dough into two parts (one slightly larger).

4️⃣ Roll the larger piece and place in a baking pan lined with parchment.

5️⃣ Spread jam evenly on top.

6️⃣ Roll the second piece and place over the jam or cut strips for a lattice.

7️⃣ Brush with beaten egg.

8️⃣ Sprinkle cinnamon sugar on top.

9️⃣ Bake at 180°C (350°F) for 30–35 minutes until golden.
