Cream Puffs (Choux Pastry) with Vanilla Cream

🔹 Ingredients

For the Choux Pastry:

  • 1 cup (240 ml) water
  • ½ cup (115 g) unsalted butter
  • 1 cup (125 g) all-purpose flour
  • 4 large eggs
  • ¼ tsp salt

For the Vanilla Pastry Cream:

  • 2 cups (480 ml) milk
  • ½ cup (100 g) sugar
  • 4 egg yolks
  • ¼ cup (30 g) cornstarch
  • 2 tbsp butter
  • 1 tsp vanilla extract

🔹 Instructions

Step 1: Make the Choux Pastry

  1. Preheat oven to 400°F (200°C).
  2. In a saucepan, bring water + butter + salt to a boil.
  3. Reduce heat and add flour all at once. Stir quickly until dough forms a ball and pulls away from the sides.
  4. Cook 1–2 minutes more to remove excess moisture.
  5. Let cool 5 minutes.
  6. Add eggs one at a time, mixing well after each until smooth and glossy.
  7. Pipe or spoon small mounds onto a lined baking sheet.
  8. Bake 20–25 minutes until golden brown and puffed.
  9. Let cool completely.
