🇭🇺 Hungarian Goulash (Gulyás)

Ingredients

  • 2 lbs (1 kg) beef chuck, cut into cubes
  • 2 large onions, finely chopped
  • 2 tablespoons lard or oil
  • 2 tablespoons Hungarian sweet paprika
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • 1 teaspoon caraway seeds (optional)
  • 1 tomato, chopped (or ½ cup canned tomatoes)
  • 1 green bell pepper, chopped
  • 2 carrots, sliced
  • 2 medium potatoes, cubed
  • 6 cups (1.5 liters) beef broth or water
  • 1 clove garlic, minced

Instructions

  1. Heat lard or oil in a large pot. Add onions and cook slowly until soft and lightly golden.
  2. Remove from heat and stir in paprika (to prevent burning).
  3. Add beef cubes and stir to coat well. Return to heat.
  4. Add garlic, salt, pepper, caraway seeds, tomato, and bell pepper. Cook 5 minutes.
  5. Pour in broth or water. Bring to a boil, then reduce heat and simmer covered for about 1 hour.
  6. Add carrots and potatoes. Continue simmering another 30–40 minutes until beef and vegetables are tender.
  7. Adjust seasoning before serving.

Serve hot with fresh bread.
