Ingredients

  • 12 oz (350g) egg noodles (wide noodles)
  • 1 small head green cabbage (about 2 lbs / 900g), finely shredded
  • 3 tablespoons oil or lard
  • 1–2 tablespoons sugar (optional, for caramelizing)
  • 1 teaspoon salt (adjust to taste)
  • 1 teaspoon freshly ground black pepper

Instructions

  1. Cook egg noodles in salted water according to package directions. Drain and set aside.
  2. Heat oil or lard in a large pan. Add shredded cabbage and salt.
  3. Cook over medium heat, stirring occasionally, for 15–20 minutes until cabbage softens and begins to brown.
  4. If making the slightly sweet version, sprinkle sugar over cabbage and continue cooking until lightly caramelized.
