Stuffed Mashed Potato Nests

Ingredients (Serves 4)

  • 4 large potatoes, peeled and chopped
  • 2 tbsp butter
  • ¼ cup milk (or more for creaminess)
  • Salt and pepper to taste
  • ½ cup shredded cheese (cheddar, mozzarella, or your choice)
  • 4 slices cooked bacon, crumbled (optional)
  • 2 green onions, chopped (optional)
  • 1 egg, beaten (for brushing, optional)

Instructions

  1. Cook potatoes:
    Boil potatoes in salted water until tender (15–20 minutes). Drain.
  2. Mash:
    Mash potatoes with butter, milk, salt, and pepper until smooth.
  3. Prepare nests:
    Preheat oven to 400°F (200°C).
    Grease a muffin tin. Spoon mashed potatoes into each cup and press a small well in the center.
  4. Stuff:
    Fill each well with cheese, bacon, and green onions if using. Top with a little extra mashed potato to form a “nest.” Brush with beaten egg for a golden finish.
  5. Bake:
    Bake 15–20 minutes until tops are lightly golden and cheese is melted.
  6. Serve:
    Let cool slightly, then carefully remove from muffin tin and serve warm.
