  • 1 tsp sugar (optional, for sweet version)
  • 1 tbsp oil or melted butter (plus more for cooking)

Instructions

  1. Make the batter:
    In a bowl, whisk eggs, milk, sparkling water, salt, sugar (if using), and oil.
    Gradually whisk in flour until smooth and thin.
    Let batter rest for 15–20 minutes.
