🇭🇺 Lecsó – Hungarian Pepper-Tomato Stew

Ingredients

  • 2 tbsp oil or lard
  • 1 large onion, sliced
  • 2–3 Hungarian wax peppers (or bell peppers), sliced
  • 3–4 ripe tomatoes, chopped (or 1 can diced tomatoes)
  • 1 tbsp Hungarian sweet paprika
  • ½ lb (250 g) smoked sausage, sliced (optional)
  • Salt and black pepper to taste

Instructions

  1. Heat oil in a large pan over medium heat. Sauté onion until soft.
  2. Remove from heat briefly and stir in paprika.
  3. Add sliced peppers and cook 5–7 minutes.
  4. Stir in tomatoes and sausage (if using).
  5. Simmer 15–20 minutes until vegetables are tender and mixture thickens.
  6. Season with salt and pepper.

Serve hot with crusty bread, rice, or eggs stirred in at the end if desired.
