Hungarian Lecsó (Pepper-Tomato Stew)

Ingredients:

  • 2 tbsp oil or lard
  • 1 large onion, sliced
  • 2–3 bell peppers (red, green, or yellow), sliced
  • 4–5 medium tomatoes, chopped (or 1 cup canned tomatoes)
  • 1 tsp sweet Hungarian paprika
  • 1–2 Hungarian sausages (optional), sliced
  • Salt & black pepper to taste
  • 1–2 cloves garlic, minced (optional)

Instructions:

  1. Heat oil in a large pan. Sauté onion until soft.
  2. Add paprika and stir briefly (do not burn).
  3. Add sliced peppers and cook 5–7 minutes until slightly softened.
  4. Stir in tomatoes (and garlic, if using).
  5. If using sausage, add now and simmer 10–15 minutes until vegetables are tender and flavors meld.
  6. Season with salt and pepper to taste.

Serve hot with fresh bread, over rice, or as a side to meats.
Lecsó is a classic Hungarian comfort dish — simple, colorful, and full of flavor.
