Hungarian Hangover Soup (Korhelyleves) – Recipe Only

Ingredients:

  • 200 g smoked sausage, sliced
  • 1 tbsp oil or lard
  • 1 small onion, chopped
  • 1 tbsp sweet paprika
  • 2 cloves garlic, minced
  • 1 tsp caraway seeds
  • 1 bay leaf
  • 4 cups water or broth
  • 1 cup sauerkraut (rinsed if very sour)
  • 1/2 cup sour cream
  • 1 tbsp flour
  • Salt and black pepper, to taste

Instructions:

  1. Heat oil in a pot, sauté onion until soft.
  2. Add sausage and cook lightly.
  3. Stir in paprika, garlic, caraway seeds, and bay leaf.
  4. Add water/broth and sauerkraut; simmer 20 minutes.
  5. Mix sour cream with flour, stir into soup.
  6. Simmer 5 more minutes, season to taste, and serve hot.
