Ingredients

Dough

  • 2¼ tsp active dry yeast
  • ½ cup warm milk
  • ¼ cup sugar
  • ½ cup butter, softened
  • 1 egg
  • ½ tsp salt
  • 2½–3 cups all-purpose flour

Nut Filling

  • 2 cups finely ground walnuts
  • ½ cup sugar
  • ¼ cup warm milk
  • 1 tbsp melted butter
  • 1 tsp vanilla
  • ½ tsp cinnamon (optional)

Instructions

  1. Activate yeast:
    Mix warm milk, yeast, and 1 tbsp sugar. Let sit 5–10 minutes until foamy.
  2. Make dough:
    Add remaining sugar, butter, egg, salt, and flour. Knead until soft and smooth.
    Cover and let rise 1 hour, until doubled.
  3. Prepare filling:
    Mix walnuts, sugar, milk, butter, vanilla, and cinnamon into a thick paste.
  4. Assemble:
    Roll dough into a rectangle. Spread filling evenly, leaving edges clear.
    Roll tightly like a jelly roll and seal edges.
  5. Second rise:
    Place on lined baking tray. Cover and rest 30 minutes.
  6. Bake:
    Bake at 180°C / 350°F for 30–35 minutes, until golden.
  7. Cool & slice:
    Let cool before slicing.

Tips

  • Brush warm roll with butter for a soft crust
  • Dust with powdered sugar or drizzle with glaze
  • Also great with pecans or hazelnuts
