Instructions
- Sauté onion
Heat oil in a pot over medium heat.
Add onions and garlic, cook until soft and translucent. - Add paprika
Remove from heat briefly, stir in paprika quickly to avoid burning. - Add vegetables
Add chopped tomatoes and bell pepper, sauté 2–3 minutes. - Add potatoes and liquid
Add diced potatoes, salt, pepper, and enough water or broth to just cover.
Bring to a boil, then reduce heat and simmer for 20–25 minutes, until potatoes are tender. - Finish
Adjust seasoning. Serve hot, optionally with a dollop of sour cream.
