- ½ lb (225 g) shrimp, peeled & deveined
- 1 tbsp Cajun seasoning
- 1 tbsp olive oil or butter
- 2 cloves garlic, minced
- 2 green onions, chopped
- ¼ cup cheddar cheese, shredded (plus extra for topping)
- 2 tbsp cream cheese
Optional Garnish
- Parsley or chives, chopped
- Lemon wedges
Instructions
- Bake the potatoes
Preheat oven to 400°F (200°C).
Pierce potatoes with fork, bake 45–50 minutes until tender.
Let cool slightly, then cut in half lengthwise and scoop out the insides into a bowl, leaving a ¼-inch shell. - Prepare the shrimp
Toss shrimp with Cajun seasoning.
Heat oil/butter in a skillet, cook shrimp 2–3 minutes per side until just cooked. Remove and chop roughly. - Make the filling
Mash the potato insides with butter, milk, cream cheese, salt, and pepper.
Stir in shrimp, garlic, green onions, and cheddar. - Stuff the potatoes
Spoon mixture back into potato shells. Sprinkle extra cheese on top. - Bake again
Bake 15–20 minutes at 375°F (190°C) until cheese is melted and tops are golden. - Serve
Garnish with parsley/chives and a squeeze of lemon.
