
🍫🥜 Chocolate-Covered Peanut Butter Roll Cake
Ingredients
Chocolate Sponge Cake
- 4 large eggs
- ¾ cup sugar
- ¼ cup vegetable oil
- ¼ cup milk
- 1 tsp vanilla extract
- ¾ cup all-purpose flour
- ¼ cup cocoa powder
- 1 tsp baking powder
- Pinch of salt
Peanut Butter Filling
- ¾ cup creamy peanut butter
- ½ cup powdered sugar
- 2–3 tbsp heavy cream or milk
- 1 tsp vanilla extract
Chocolate Coating
- 1 cup chocolate chips
- ½ cup heavy cream
Instructions
- Preheat oven to 350°F (180°C). Line a jelly-roll pan with parchment.
- Beat eggs and sugar until thick and pale.
Add oil, milk, and vanilla. - Sift flour, cocoa, baking powder, and salt. Fold gently into batter.
- Spread evenly in pan and bake 10–12 minutes.
- While hot, roll cake (with parchment) and let cool.
- Mix peanut butter, powdered sugar, cream, and vanilla until smooth.
- Unroll cake, spread filling evenly, then roll again tightly.
- Heat cream and pour over chocolate chips. Stir smooth.
- Pour chocolate coating over roll cake.
- Chill 30 minutes before slicing.
