
🍲❤️ Hearty American Goulash Soup (Hamburger Vegetable Soup with Pasta)
Rich, comforting, and packed with beef, beans, veggies, and macaroni — just like the image. Perfect one-pot meal!
🛒 Ingredients
- 1 lb (450 g) ground beef
- 1 tbsp olive oil (if needed)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 green bell pepper, diced
- 1 zucchini, diced (optional)
- 1 can (14–15 oz) diced tomatoes
- 1 can (15 oz) tomato sauce
- 1 can (15 oz) white beans or kidney beans, drained
- 6 cups beef broth
- 1 tsp paprika
- 1 tsp Italian seasoning
- ½ tsp black pepper
- 1 tsp salt (adjust to taste)
- 1 cup elbow macaroni (uncooked)
- Fresh parsley (for garnish)
👩🍳 Instructions
- Brown the Beef
- In a large pot or Dutch oven, brown ground beef over medium heat.
- Drain excess fat if needed.
- Build the Flavor
- Add onion, garlic, carrots, celery, and bell pepper.
- Cook 5–7 minutes until softened.
- Add Tomatoes & Seasoning
- Stir in diced tomatoes, tomato sauce, paprika, Italian seasoning, salt, and pepper.
- Simmer
- Add beef broth and beans.
- Bring to a gentle boil, then simmer 20 minutes.
- Add Pasta
- Stir in macaroni and zucchini.
- Cook 8–10 minutes, until pasta is tender.
- Finish & Serve
- Taste and adjust seasoning.
- Sprinkle with parsley and serve hot.

- Thicker soup? Add less broth.
- Spicy kick? Add red pepper flakes.
