
Banana Walnut Cream Cake 🍌🎂
Ingredients (Cake):
- 3 ripe bananas, mashed
- 2 eggs
- ½ cup sugar
- ½ cup oil or melted butter
- 1 tsp vanilla extract
- 1½ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- Pinch of salt
- ½ tsp cinnamon (optional)
- ½ cup chopped walnuts
Ingredients (Cream Filling/Topping):
- 1 cup heavy cream, cold
- 3 tbsp powdered sugar
- 1 tsp vanilla extract
Instructions:
- Preheat oven to 350°F (180°C). Grease and line a cake pan.
- In a bowl, whisk eggs and sugar until light. Add oil, vanilla, and mashed bananas.
- In another bowl, mix flour, baking powder, baking soda, salt, and cinnamon.
- Combine dry ingredients with wet ingredients gently. Fold in walnuts.
- Pour batter into pan and bake 35–40 minutes, until a toothpick comes out clean.
- Let cake cool completely.
- Whip cream with powdered sugar and vanilla until stiff peaks form.
- Spread cream over the cake or slice cake and fill the middle.
- Garnish with extra walnuts or banana slices if desired.
