Banana Walnut Cream Cake 🍌🎂

Ingredients (Cake):

  • 3 ripe bananas, mashed
  • 2 eggs
  • ½ cup sugar
  • ½ cup oil or melted butter
  • 1 tsp vanilla extract
  • 1½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • Pinch of salt
  • ½ tsp cinnamon (optional)
  • ½ cup chopped walnuts

Ingredients (Cream Filling/Topping):

  • 1 cup heavy cream, cold
  • 3 tbsp powdered sugar
  • 1 tsp vanilla extract

Instructions:

  1. Preheat oven to 350°F (180°C). Grease and line a cake pan.
  2. In a bowl, whisk eggs and sugar until light. Add oil, vanilla, and mashed bananas.
  3. In another bowl, mix flour, baking powder, baking soda, salt, and cinnamon.
  4. Combine dry ingredients with wet ingredients gently. Fold in walnuts.
  5. Pour batter into pan and bake 35–40 minutes, until a toothpick comes out clean.
  6. Let cake cool completely.
  7. Whip cream with powdered sugar and vanilla until stiff peaks form.
  8. Spread cream over the cake or slice cake and fill the middle.
  9. Garnish with extra walnuts or banana slices if desired.
