Hungarian Stuffed Cabbage Rolls (Töltött Káposzta)

Ingredients:

  • 1 large head green cabbage
  • 1 lb ground pork (or pork & beef mix)
  • 1 cup cooked rice
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp sweet Hungarian paprika
  • ½ tsp black pepper
  • Salt, to taste
  • 1 tbsp oil or lard
  • 1½ cups tomato sauce
  • 1 cup sauerkraut (optional, traditional)
  • 1 cup water or broth
  • Sour cream, for serving

Instructions:

  1. Bring a large pot of salted water to a boil. Remove cabbage core and soften leaves in boiling water. Peel off leaves carefully.
  2. In a bowl, mix ground meat, rice, onion, garlic, paprika, salt, and pepper.
  3. Place filling on each cabbage leaf, fold sides in, and roll tightly.
  4. Line a pot with leftover cabbage or sauerkraut. Arrange rolls seam-side down.
  5. Pour tomato sauce and water/broth over rolls.
  6. Cover and simmer on low for 1½–2 hours, stirring gently once or twice.
  7. Serve hot with a spoon of sour cream.
