- Prep

- Grease and line a 9-inch (22 cm) springform pan.
- Egg whites
- Beat egg whites with salt until stiff peaks form. Set aside.
- Yolks
- Beat egg yolks with sugar until pale and fluffy.
- Add vanilla, cinnamon, and lemon zest.
- Fold
- Gently fold ground hazelnuts into yolk mixture.
- Carefully fold in egg whites in 2–3 additions.
- Bake
- Pour batter into pan.
- Bake 35–40 minutes, until set and lightly golden.
- Cool completely before removing from pan.
