🛒 Ingredients
Cabbage
- 1 large sour cabbage head or 1 large green cabbage
- Hot water (for softening leaves if using fresh cabbage)
Filling
- 1 lb (450 g) ground pork (or pork & beef mix)
- ½ cup uncooked rice
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 egg
- 1½ tsp sweet Hungarian paprika
- Salt & black pepper, to taste
Sauce
- 2 tbsp oil or lard
- 1 onion, chopped
- 2 tbsp sweet Hungarian paprika
- 2 tbsp tomato paste
- 1–2 cups sauerkraut (optional but traditional)
- 2–3 cups water or broth
- Bay leaf (optional)
👩🍳 Instructions
- Prepare cabbage
- If using fresh cabbage: remove core, separate leaves, and blanch in hot water until flexible.
- Trim thick ribs slightly.
- Make filling
- In a bowl, mix meat, rice, onion, garlic, egg, paprika, salt, and pepper.
- Roll
- Place filling on each leaf, fold sides in, roll tightly.
- Make sauce
- Heat oil in a large pot.
- Sauté onion until soft.
- Remove from heat, stir in paprika (don’t burn it).
- Add tomato paste, sauerkraut, broth, and bay leaf.
- Cook
- Nestle cabbage rolls into the sauce.
- Cover and simmer on low 1½–2 hours, until tender.
- Serve
- Serve hot with sour cream and fresh bread.
