  • 1 lb (450 g) ground pork (or pork & beef mix)
  • ½ cup uncooked rice
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 egg
  • 1½ tsp sweet Hungarian paprika
  • Salt & black pepper, to taste

Sauce

  • 2 tbsp oil or lard
  • 1 onion, chopped
  • 2 tbsp sweet Hungarian paprika
  • 2 tbsp tomato paste
  • 1–2 cups sauerkraut (optional but traditional)
  • 2–3 cups water or broth
  • Bay leaf (optional)

👩‍🍳 Instructions

  1. Prepare cabbage
    • If using fresh cabbage: remove core, separate leaves, and blanch in hot water until flexible.
    • Trim thick ribs slightly.
  2. Make filling
    • In a bowl, mix meat, rice, onion, garlic, egg, paprika, salt, and pepper.
  3. Roll
    • Place filling on each leaf, fold sides in, roll tightly.
  4. Make sauce
    • Heat oil in a large pot.
    • Sauté onion until soft.
    • Remove from heat, stir in paprika (don’t burn it).
    • Add tomato paste, sauerkraut, broth, and bay leaf.
  5. Cook
    • Nestle cabbage rolls into the sauce.
    • Cover and simmer on low 1½–2 hours, until tender.
