🇭🇺 Lecsó – Hungarian Pepper & Tomato Stew (Recipe Only)

Ingredients

  • 2 tbsp oil or lard
  • 1 large onion, sliced
  • 2 cloves garlic, minced (optional)
  • 2 tbsp sweet Hungarian paprika
  • 3–4 Hungarian wax peppers (or bell peppers), sliced
  • 3 ripe tomatoes, chopped (or 1½ cups canned tomatoes)
  • 1 tsp salt (to taste)
  • Black pepper, to taste
  • Optional additions: sliced sausage (kolbász), eggs, or rice

Instructions

  1. Heat oil in a pan and cook onion until soft.
  2. Remove from heat, add paprika, and stir quickly.
  3. Return to heat, add peppers and cook 5 minutes.
  4. Add tomatoes, salt, and pepper.
  5. Simmer uncovered 20–30 minutes until soft and juicy.
  6. Add sausage or eggs if using, cook until done, and serve.
