Ingredients

  • 2 cups (500 ml) milk
  • 3 large eggs (separated)
  • ⅓ cup (70 g) sugar
  • 3 tbsp cornstarch
  • 1 tsp vanilla extract
  • Pinch of salt
  • Butter (for greasing)
  • Powdered sugar (for dusting)

Instructions

  1. Prepare the base
    • In a saucepan, whisk milk, sugar, cornstarch, and vanilla.
    • Cook over medium heat, stirring constantly, until thick and smooth.
    • Remove from heat and let cool slightly.
    • Whisk in egg yolks one at a time.
  2. Whip egg whites
    • Beat egg whites with a pinch of salt until stiff peaks form.
  3. Fold gently
    • Fold egg whites into the milk mixture in 2–3 additions, gently.
  4. Bake
    • Preheat oven to 180°C / 350°F.
    • Butter a baking dish or ramekins.
    • Pour mixture in.
    • Bake 25–30 minutes until puffed and lightly golden.
  5. Serve immediately
    • Dust with powdered sugar.
