Old-Fashioned Nut Roll (Classic Walnut Roll) 🌰🍞

Ingredients

Dough

  • 4 cups (500 g) all-purpose flour
  • ½ cup (100 g) sugar
  • 2¼ tsp (7 g) active dry yeast
  • 1 cup (240 ml) warm milk
  • ½ cup (115 g) butter, melted
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ tsp salt

Nut Filling

  • 2 cups finely ground walnuts (or mixed nuts)
  • ¾ cup sugar
  • ½ cup warm milk
  • 1 tsp cinnamon (optional)
  • 1 tsp vanilla extract

Instructions

  1. Prepare the dough
    • Dissolve yeast in warm milk with 1 tsp sugar; rest 5–10 minutes.
    • In a bowl, mix flour, sugar, and salt.
    • Add eggs, melted butter, vanilla, and yeast mixture.
    • Knead until soft and smooth.
    • Cover and rise 1–1½ hours, until doubled.
  2. Make the filling
    • Mix ground nuts, sugar, cinnamon, vanilla, and warm milk into a spreadable paste.
  3. Roll & fill
    • Roll dough into a rectangle.
    • Spread nut filling evenly, leaving a small border.
    • Roll up tightly, seam side down.
  4. Second rise
    • Place on lined baking sheet or loaf pan.
    • Cover and rise 30 minutes.
  5. Bake
    • Bake at 180°C / 350°F for 35–40 minutes until golden.
  6. Finish
    • Cool completely.
    • Dust with powdered sugar or glaze if desired.
