Ingredients

  • 1 cup (125 g) all-purpose flour
  • 2 large eggs
  • 1¼ cups (300 ml) milk
  • 1 tbsp sugar (optional, for sweet crêpes)
  • ¼ tsp salt
  • 1 tbsp melted butter or oil
  • ½ tsp vanilla (optional)

Instructions

  1. In a bowl, whisk flour, eggs, milk, sugar, salt, butter, and vanilla until smooth.
  2. Let batter rest 10–15 minutes (best texture).
  3. Heat a non-stick pan over medium heat and lightly grease.
  4. Pour a small ladle of batter, swirl to coat pan thinly.
  5. Cook 30–40 seconds until edges lift, flip and cook 15–20 seconds more.
  6. Repeat with remaining batter.
