Ingredients

  • 10 oz (300 g) cottage cheese or farmer cheese (well drained)
  • 2 large eggs
  • ¾ cup (150 g) sugar
  • 1 tsp vanilla extract
  • Zest of 1 lemon (optional, traditional)
  • 1½ cups (190 g) all-purpose flour
  • 1 tsp baking powder
  • Pinch of salt

For Frying

  • Vegetable oil

For Serving

  • Powdered sugar
  • Jam or sour cream (optional)

Instructions

  1. In a bowl, mash cottage cheese until smooth (or blend briefly).
  2. Add eggs, sugar, vanilla, and lemon zest; mix well.
  3. Stir in flour, baking powder, and salt to form a soft, slightly sticky dough.
  4. Heat oil to 350°F (175°C) in a deep pan.
  5. With lightly floured hands or a spoon, drop small portions of dough into hot oil.
  6. Fry 2–3 minutes per side until golden and puffed.
  7. Remove and drain on paper towels.
  8. Dust with powdered sugar and serve warm.

Tips

  • Dough should be soft—don’t over-flour
  • Best eaten fresh and warm
  • Light, fluffy, and gently tangy 🇭🇺💛
