Ingredients

  • 2 large eggs
  • ¾ cup sugar
  • ½ cup milk or plain yogurt
  • ½ cup vegetable oil (or melted butter)
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin pan with paper liners.
  2. In a bowl, whisk eggs and sugar until light.
  3. Add milk (or yogurt), oil, and vanilla. Mix well.
  4. Add flour, baking powder, and salt. Mix just until smooth (don’t overmix).
  5. Fill muffin cups ¾ full.
  6. Bake 18–22 minutes until golden and a toothpick comes out clean.
  7. Cool slightly and enjoy.

Tips for Tall Muffins

  • Batter should be thick
  • Don’t overmix
  • Bake immediately after mixing
