Cake Batter

  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ¾ cup buttermilk (or milk + 1 tsp vinegar)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a round cake pan.
  2. Melt butter and brown sugar together; pour into the pan. Arrange pecans evenly on top.
  3. In a bowl, whisk flour, baking powder, baking soda, and salt.
  4. Cream butter and sugar until light. Beat in eggs and vanilla.
  5. Add dry ingredients alternately with buttermilk.
  6. Pour batter gently over pecans.
  7. Bake 40–45 minutes until a toothpick comes out clean.
  8. Cool 10 minutes, then invert onto a serving plate.
