Ingredients

Crust

  • 2 cups graham cracker crumbs
  • ½ cup melted butter
  • 2 tbsp sugar

Cheesecake Filling

  • 16 oz (450 g) cream cheese, softened
  • 1 cup melted white chocolate (cooled)
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • ½ cup sour cream or heavy cream

Strawberry Topping

  • 2 cups fresh strawberries, sliced
  • ¼ cup sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch + 2 tbsp water

Instructions

  1. Preheat oven to 325°F (165°C). Grease a springform pan.
  2. Mix crust ingredients, press into pan, and bake 10 minutes. Cool.
  3. Beat cream cheese until smooth. Add white chocolate, sugar, and vanilla.
  4. Beat in eggs one at a time. Mix in sour cream.
  5. Pour filling over crust.
  6. Bake 45–55 minutes until center is just set. Cool completely.
  7. For topping, cook strawberries, sugar, lemon juice, and cornstarch mixture until thick. Cool.
  8. Spoon topping over cheesecake. Chill 4 hours before serving.
