Ingredients

  • 2 lb beef chuck, cut into chunks
  • Salt & black pepper, to taste
  • 2 tbsp flour
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 3 potatoes, cubed
  • 3 cups beef broth
  • 1 cup crushed tomatoes
  • 1 tbsp tomato paste
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 bay leaf

Instructions

  1. Season beef with salt, pepper, and flour.
  2. Heat oil in a large pot and brown beef in batches. Remove and set aside.
  3. In the same pot, sauté onion and garlic until soft.
  4. Add carrots and celery; cook 2 minutes.
  5. Return beef to the pot. Stir in tomato paste, paprika, thyme, and bay leaf.
  6. Add broth and crushed tomatoes. Bring to a boil.
  7. Reduce heat, cover, and simmer 1½–2 hours until beef is tender.
  8. Add potatoes and simmer 25–30 minutes more.
  9. Adjust seasoning and serve hot.

Perfect with crusty bread or mashed potatoes!
